If you have kids, an easy breakfast is a MUST for those busy mornings, n’est ce pas? But wait, as the kids head back to school, there are more nourishing and satisfying choices available than a bowl of cold cereal, and some, like this kid-tested recipe for overnight oats, are just as simple and easy!
Nutrients that help support learning and calm nerves are important in the first meal of the day. Kids who eat a good breakfast have better focus and performance. This breakfast with its classic honey-lemon pairing is especially tasty, so they will eat it all up, and it also supports immunity.
About a quarter of parents and guardians surveyed by Parents magazine said they worried about kids not eating healthy and about a third said they worried about their children’s stress. And this was before the events of the last year! This is why I love that this breakfast has slow-release complex carbs, which are great for sustained energy, and even moods.
Using manuka honey in this recipe is a smart move – it is not your average sweetener! For one thing, you do not need to worry about your children’s teeth when they enjoy the delicious benefits of manuka honey, it is a tooth-friendly option. A randomized controlled trial of 124 school children found that using a manuka honey mouthwash for 22 days led to a decrease in plaque and gingivitis (gum inflammation).
And that is not all. Using manuka honey can be soothing to throats and digestive tracts, making it good for seasonal issues. When parents of 105 children (age 2 to 18) with upper respiratory infections were surveyed, they found that using ½ a teaspoon to 2 teaspoons of honey was statistically superior to no treatment and they rated it better than using cough syrup.
Overnight oats are like mama’s little helper – ready for you when you need them to help you get out the door quickly with little clean up. You can even prepare double and triple batches of these sweet and tangy lemon-poppyseed overnight oats in advance. Just play around with the right portion sizes for your family.

Recipe - Lemon Poppyseed Overnight Oats
1/2 cup oats (I use quick -makes it very creamy) 🤤
1/2 cup oat milk
1/4 cup coconut yogurt
1/2 tbsp cashew butter
1 tsp Flora Manuka Honey
1 tsp poppy seeds
1 tsp lemon juice
1/2 tsp lemon zest
1/2 tsp vanilla⠀⠀⠀⠀⠀⠀
Directions: Mix all ingredients in a glass jar. Cover + let sit overnight in the fridge to thicken. In the morning, give it a stir + add fresh blueberries on top!
