“Greens” & Tonic
Our take on a gin and tonic – a refreshing summer spritzer with or without the gin. Use any greens powder you have on hand – we’re using raw Chlorella powder here

Serves: 4
Time: 5 minutes
Ingredients:
1 English cucumber, roughly chopped
3 tbsp raw Chlorella powder
2 tbsp simple syrup (optional)
4 8-oz bottles tonic water
6 oz gin (optional)
2 tbsp raw honey
2 tbsp coconut sugar
Cucumber slices and thyme, as garnish
Directions:
Prepare the greens mixture by adding the cucumber to a high speed blender and blending until liquified. Use a strainer or cheesecloth to strain the cucumber liquid from the fibre/pulp into a mixing bowl. (Save the pulp for smoothies or tzatziki). Add Chlorella and simple syrup to the bowl and whisk well.
Chill 4 cocktail glasses. Add the honey and raw sugar to separate plates and spread evenly. Dip each glass in honey, then sugar to rim.
Add 3 tbsp greens mixture to each glass, then fill with ice. Pour gin and tonic water over top and serve with garnish.
