Kale Fall Salad with Apple Cider Vinaigrette

Serves 4-5

Ingredients:

  • 5-6 cups chopped kale
  • 1 medium apple, diced
  • ¼ cup chopped almonds
  • ¼ cup pumpkin seeds
  • ¼ cup dried cranberries
  • ¼ cup Ginger Lemon Apple Cider Vinegar
  • ¼ cup olive oil
  • 1 tsp dijon mustard
  • Salt + pepper, to taste

Directions:

  1. Add all salad ingredients to a large bowl.
  2. In a small bowl, mix together the dressing ingredients.
  3. Pour dressing over salad and mix.
