Moscow Mules with Beet & Blackberry Syrup
Serves: 1
Time: 10 minutes + 40 minutes cooling time
Ingredients:
Syrup:
1 cup water
1 cup sugar
¼ cup Red Beet Crystals
½ cup crushed blackberries
Moscow Mule:
1/2 cup ginger beer
3 oz Beet & Blackberry Syrup
1.5 oz gin or vodka
Squeeze of lime
Ginger slices, for garnish
Mint leaves, for garnish
Instructions:
Prepare the syrup ahead of time by adding the sugar and water to a pot over medium heat just until the sugar has dissolved. Remove from heat and add the beet crystals and blackberries. Let this cool on a countertop for 30 minutes, then strain the blackberries out. Transfer to a glass jar and cool in the fridge for at least 10 minutes.
Fill a copper mug with ice, then add all Moscow mule ingredients and stir well. Garnish with mint and ginger.
