Beet Pink Pancakes

Ingredients:
1 cup spelt flour
1 heaping tablespoon Flora Beet Crystals
1 tablespoon baking powder
1 tablespoon sugar (optional)
1 cup oat milk
2 tablespoons coconut oil, melted
1 egg
¼ tsp vanilla bean powder
Pinch of sea salt
Coconut oil, for the pan
Method:
Whisk all ingredients in a large mixing bowl until very smooth. Heat a skillet over medium heat and use 1/2 teaspoon of coconut oil to glaze the pan.
Scoop about 1/4 cup of batter at a time, waiting for the surface of the batter to bubble before flipping. Makes about 4 average sized pancakes, or 2-3 large ones.
Serve immediately with stewed strawberries, yoghurt and maple syrup (or your desired toppings)!
