1. Grind the sesame seeds with a mortar and pestle.
  2. Add a clove of garlic and muddle until well mashed.
  3. Add in the apple cider vinegar and oil, and mix.
  4. Set aside to let the flavours meld.
  5. Using a mandolin or knife, slice the carrots into matchsticks.
  6. Then, slice the apple.
  7. Mix together in a bowl and dress, tossing to coat.
